Soft and Spiced Gingerbread Cookie Recipe

Let’s kick off the holiday festivities with this simple, delicious recipe for soft and spiced gingerbread cookies. These are perfect for sharing, decorating, or simply savouring with a cup of cocoa in your new kitchen.

Ingredients:

  • Dry Ingredients:

    • 3 1/4 cups all-purpose flour

    • 3/4 teaspoon baking soda

    • 1 tablespoon ground ginger

    • 1 tablespoon ground cinnamon

    • 1/2 teaspoon ground cloves

    • 1/2 teaspoon ground nutmeg

    • 1/2 teaspoon salt

  • Wet Ingredients:

    • 3/4 cup (1 1/2 sticks) unsalted butter, softened

    • 1/2 cup packed dark brown sugar

    • 1/2 cup granulated sugar

    • 2/3 cup unsulfured molasses

    • 1 large egg

    • 1 teaspoon pure vanilla extract

Directions:

  1. Mix the Dough:
    Combine dry ingredients in one bowl and wet ingredients in another. Slowly mix the dry into the wet until a dough forms.

  2. Chill:
    Divide the dough in half, wrap it up, and refrigerate for at least 2 hours.

  3. Roll, Cut, and Bake:
    Roll out the dough, cut into shapes, and bake at 350°F for 8-10 minutes.

  4. Decorate:
    Once cool, decorate with icing, sprinkles, or enjoy them plain!
